But What is Tex-Mex?
Tex Mex is a cuisine born on the border of Texas and Mexico, when the cowboys (AKA vaqueros) of the early 1900's were paid partially with beef. They grilled the meat, wrapped it in a tortilla with whatever fixings they liked and the fajita was born!
Most of what Americans call Mexican is actually Tex Mex: nachos, burritos, etc. This cuisine is a fusion that has evolved over the years into a unique American tradition. Most of our menu items celebrate this collaboration. Of course we do love to feature some traditional Mexican fare too, such as our enchiladas with house made mole and verde sauces, while at the same time some of our other dishes are all Texas, such as the Ribs or the Rio Grande Red. |
